The most widely accepted variant of the legend of Tbilisi’s founding says that in the mid-5th century AD, King Vakhtang I Gorgasali was hunting in the heavily wooded region with a falcon. The King’s falcon allegedly caught or injured a pheasant during the hunt, after which both birds fell into a nearby hot spring and died from burns. King Vakhtang became so impressed with the hot springs that he decided to cut down the forest and build a city. The name Tbilisi derives from the Old Georgian word «tbili», meaning warm. The complex of the Svetitskhoveli Cathedral in the centre of the town includes the cathedral church, the palace and the gates of the Katolikos Melchizedek. The historical monuments in Mtskheta are protected by UNESCO World Heritage. Transfer to Uplistsikhe. Uplistsikhe Cave Town-Fortress is situated on a rocky massif in 15 km eastwards to town Gori on the left bank of the river Mtkvari. Uplistsikhe was an important religious, political and cultural center in the Hellenistic and the late Antique periods (IV c. B.C. – IV c. A.D.). The town was in its heyday as far back as the 9th – 11th centuries. In 13th century, it was ravaged by Mongols. Living quarters and premises for communal purposes occupy a cliff territory of almost 8 hectares and are connected by footways. The majority of the caves are devoid of any decorations. The central ensemble, a big hall with coffered tunnel-vaulted ceiling, and the palace complex, is the most interesting one architecturally. The cave complexes dating to high medieval times usually included a number of small hall-churches beside the dwellings. Transfer back to Tbilisi and overnight.

Wine making remained the basic of the Georgian economy for centuries. It is a symbol of regeneration, of wealth and plenty. The continuity of wine making tradition is attested by the diversity of endemic varieties. There are 525 endemic varieties of grapevine identified in Georgia as of today. Georgia is one of the oldest wine producing regions of the world. Its long wine making history has given rise to unique methods of production. Wine in this county is aged and stored in special cone-shaped clay vessel known as a Kvevri. Each kvevri holds between 300 and 500 liters and is placed in the ground to help regulate storage temperature, keeping it between 14 and 15 C. Making wine in kvevri, is ancient traditional Georgian method now protected as intangible heritage by UNESCO. Tsinandali is a village in Kakheti, Georgia, noted for the estate and its historic winery which once belonged to the 19th-century aristocratic poet Alexander Chavchavadze (1786–1846). Here you will have a chance to taste the unique Tsinandali wine. Signaghi, also known as “city of love”, is an ancient Georgian small town 100km from Tbilisi. What is Signaghi? Imagine a large mountain, rising alone in the center of a huge valley. On the mountain – city fortress, with stunning views of the Alazani Valley and in the distance – Main Caucasian ridge with snow-capped peaks. Here, to a natural fortress, the king of eastern Georgia, Irakli II, without violating freedom of kizik, relocated residents from different districts of Kakheti and Kartli.
